How it works

The base of this baking mix consists of semi-whole grain rice flour and buckwheat flour, which ensures a good balance between flavour and dietary fibre. Because gluten-free dough naturally lacks the binding properties of gluten, this mix is enriched with Mix’Gom. This natural binder made from blonde psyllium and acacia gum absorbs water and forms a gel layer that holds the gas bubbles during rising. This gives the dough the necessary stability to rise evenly and creates a soft, resilient structure after baking.

Semi-whole grain rice flour*, buckwheat flour* (26%), corn starch*, Mix’Gom* (blonde psyllium*, acacia gum*), sea salt. *from organic farming.

Usage & Dosage

Preparation by hand:
1) In a large mixing bowl, mix the contents of the bag + the sourdough, olive oil and water with a wooden spoon.
2) When the texture of the dough is homogeneous, make the dough airy by pulling it upwards with the spoon for 1 min.
3) Place the dough in a cake tin, cover with a slightly damp cloth and let it rise for 1.30h to 2h in a room at 20-22°C.
4) Bake for 45-50 min in a preheated oven at 180°C-210°C.
In the bread machine:
Mix the ingredients well in a large mixing bowl before putting them into the machine.
