Preparation
For 4 servings: 2 glasses of barley (+/- 200g).
Bring a large quantity of salted water to the boil and add the barley, then simmer for 10 minutes over a low heat.
Drain and serve plain, with a drizzle of olive oil or a knob of butter.
Can be used as a warm side dish or cold in a salad.
Storage
Store in a cool, dry place, away from direct sunlight.
