Guar gum powder, also known as guar gum or guar gum extract, is a natural thickening agent and emulsifier made from the seeds of the guar plant (Cyamopsis tetragonoloba). This legume grows mainly in India and Pakistan. The powder is rich in dietary fibre and versatile in use. Like tapioca and locust bean gum, guar gum can bind and thicken liquids, even in small quantities. It dissolves well in water and forms a gel-like substance.
Guar gum is rich in soluble fibre and contributes to the maintenance of normal cholesterol levels in the blood, provided you consume 10g of guar gum daily as part of a varied and balanced diet.
The difference between guar gum and guar bean fibre (Sunfiber) lies mainly in the processing and fibre content. Guar gum is made by grinding the endosperm of the guar bean and contains mainly galactomannan. Guar bean fibre is made from the entire guar bean, making the fibre content much higher and allowing it to dissolve completely in water, unlike the gel-like substance of guar gum.
