Mix 100g ground buckwheat with 125ml water (or 1 part buckwheat to 1 part water). Heat the water in a saucepan until it simmers. Stir in the buckwheat and mix well to moisten. Cover and leave on a very low heat for a maximum of 1 minute. Turn off the heat and allow to swell for 4 to 5 minutes with the lid on the pan. Season to taste and serve warm as a side dish or cold in a salad.
Store in a dry, cool place, out of direct sunlight.
