Producing bamboo salt requires significant experience and patience. Sea salt is placed in tubes of three-year-old bamboo and sealed with red mountain clay. It is then heated, ground, reheated, and ground again up to nine times, for 8-15 hours over a hot pine wood fire. The sulphur-rich bamboo carbonises, with the salt partially absorbing the juices and minerals from the bamboo and the red clay each time.
Usage: Use to season dishes.
