Because gluten-free dough lacks the natural elasticity of wheat gluten, this mix uses a functional combination of guar gum and xanthan gum. Requirements for white bread: 400 grams mix (this packaging), 7 grams dry yeast (not in this packaging), 400 ml lukewarm water, 1 tablespoon honey, 1 tablespoon oil or margarine. Mix all ingredients in a bowl for 3 to 4 minutes (first on a slow setting, then faster). Grease a bread tin (dim. 22x11x7 cm) with oil or margarine. Put the dough in the tin (use a wet spatula if necessary), smooth it out and sprinkle with water. Loosen the dough from the edges and brush the whole thing with oil. For a nice result, use an oiled spatula to make a cut about 3 cm deep along the length. Let it rise (2 to 3 cm for 30 to 60 minutes) in a warm and draught-free place, preferably in a plastic bag. Boil 100 ml of water and put this in an ovenproof dish. Place this together with the bread in a preheated oven at 225 °C for 60 minutes. After the first 10 minutes, remove the dish of water from the oven and set the temperature to 200 °C. After 45-50 minutes, remove the bread from the oven and bread tin and let it cool on a rack.
