Honey is a purely natural product. Bees collect nectar from flowers and convert it into honey using enzymes. The colour and taste of honey are largely determined by the origin of the nectar. The degree of crystallisation also influences the taste. When the beekeeper seeds the honey with a very small amount of finely crystallising honey and then stirs the honey daily for several weeks, the final product is creamed honey.

Storage
Honey may crystallise over time. This is a natural process and is easily remedied. Place the entire jar in a pan of lukewarm water for half an hour. Store at room temperature.
