Usage
This versatile gelling agent is ideal for all dishes requiring a setting agent, whether savoury or sweet: jellies, jams, desserts, and aspics. The gelling power depends on acidity; acidic dishes will require slightly more Agar-agar. Do not combine with chocolate or kiwi, as these neutralise the gelling effect. For jam: use 4g of Agar-agar powder for 1kg of prepared fruit or 1 litre of fruit juice. Bring the fruit and Agar-agar to the boil, then add a sweetener of your choice and thicken to the desired consistency.
