Use 75g of rice and 250ml of hot stock per person. Heat a splash of (olive) oil in a heavy-based pan. Add the rice and stir over a low heat for about 1 minute until the grains are translucent. Add the stock in small portions while stirring. Add the next splash of stock once the previous one has been absorbed. Repeat this until the stock is finished (20 - 25 minutes).

Store in a cool, dry place in a sealed container.
