Usage
Shoyu and Tamari are flavour enhancers, the healthy liquid counterparts to stock cubes. They are equally suited to Western and Eastern cuisine. Use them not only to salt dishes but also to enhance the natural flavour of ingredients, both during cooking and at the table. The characteristic taste of Shoyu is the result of aromatic components formed during fermentation. These are temperature-sensitive. Therefore, Shoyu does not withstand prolonged heating and should only be added at the end of the cooking process to ensure the flavour is not lost. Shoyu combines perfectly with pickles, stir-fries, rice, noodles, veggie sushi, sashimi, or steamed vegetables, as well as with mirin (rice wine), wasabi, ginger, or grated daikon.
