Usage
Shoyu and Tamari are flavour enhancers, the healthy and liquid counterparts to a stock cube. They are equally suitable for Western and Eastern cuisine. Use them not only to salt dishes but also to enhance the natural flavour of ingredients, both during cooking and at the table. The characteristic flavour of Shoyu results from aromatic components formed during fermentation. These are temperature-sensitive. Therefore, Shoyu is not resistant to prolonged heating and should only be added at the end of the cooking process to preserve its flavour. Shoyu pairs perfectly with pickles, stir-fries, rice, noodles, veggie sushi, sashimi, or steamed vegetables, with mirin (rice wine), wasabi, ginger, or grated daikon.
