Organic unpasteurised mugi miso glass jar
Mugi miso is made from organic soya beans and barley. This miso is a perfect blend of all five flavours: salty, sweet, bitter, sour, and umami. Mugi miso is produced using traditional methods and ferments for at least 12 months in 100-year-old cedar barrels. This time is necessary to deepen the flavour and add healthy properties. The result is an authentic-tasting Japanese seasoning with a flavour profile between hatcho and shiro miso.
Mugi miso is excellent for making miso soup, but also works well in noodle, vegetable, and tofu dishes. Mugi miso has a medium-strength flavour and is slightly saltier than genmai miso.
