Usage
Mix with wheat flour to increase protein content or use to make seitan. Seitan can be prepared as schnitzel, mince, or in cubes.
Preparing seitan: mix the gluten with water, form a ball, and place it in a large amount of boiling salted water with herbs. Cook for 1 hour. The ball will double or triple in volume. Gluten is the protein element in wheat grain.
