Ingredients: Cinnamon, nutmeg, cloves, allspice, ginger, coriander seed, mace, cardamom
Usage: Requirements for speculaas biscuits or speculaas chunks: 500g self-raising flour (or 500g plain flour + 5 tbsp baking powder), 325g butter, 225g light brown soft sugar, 30g blanched or flaked almonds, 20g speculaas spices, 1 tsp salt, 1 egg.
Mix flour (or plain flour with baking powder), sugar, speculaas spices, and salt. Add butter and knead to form a smooth dough ball. Refrigerate for 1 hour.
For speculaas biscuits: roll out dough on a greased speculaas board, fill the moulds, trim excess dough. Optionally press almonds on top. Invert the board onto a greased baking tray.
For speculaas chunks: roll out dough to 1cm thickness on a greased baking tray. Optionally press blanched almonds into the dough and brush the top with beaten egg.
Place baking tray in a preheated oven (150-170°C, gas mark 2 or 3). Bake for 20-25 mins for speculaas biscuits, 45-50 mins for speculaas chunks.
Storage: Store in a dry, sealed container.
