During this process, genmai miso ferments for no less than 18 months in large, 100-year-old cedar barrels. This gives the miso a deep, authentic, and incomparable flavour. Genmai miso is ideal as a base for (miso) soups, sauces, and marinades, and is a handy seasoning for stir-fry and stew dishes.
